Greek Bowls
These delicious bowls will make you feel like you're on vacation in Greece! So healthy, fresh, and delicious!

Method
- Drain tofu and cut into cubes. Bake at 350 degrees for 30 minutes or until slightly browned
- Cook brown rice according to package directions. To save time, buy cooked brown rice in frozen section of the grocery store and sauté on stove for 5 – 10 minutes or until cooked through.
- Chop onions, grape tomatoes, roasted red peppers, lettuce, cucumbers, and red onions into small, bite-size pieces.
- Drain olives and place in separate bowl.
- Assemble bowls with all ingredients (see picture) and top with Tzatziki sauce or Greek dressing (Ranch will also work!)
