Protein-Packed Pasta Salad
This gluten-free, dairy-free pasta salad is packed with plant-based protein and is absolutely delicious! Perfect for meal prepping!

Ingredients
- 2 (8 oz.) packages of lentil rotini pasta
- 1 cup each (chopped black olives, diced English cucumbers, chopped baby spinach)
- 1/8 cup diced red onion
- 1 cup prepared homemade vegan ranch (see my Plant-Based Ranch Seasoning for recipe)
Instructions
- Cook pasta according to package directions until slightly tender.
- Drain pasta and rinse with cool water. Drain completely and add to large bowl.
- Add chopped veggies on top.
- Pour ranch over pasta mixture and stir thoroughly to combine.
- Enjoy right away or store in airtight container in fridge for meals throughout the week!
