Protein-Packed Pasta Salad

This gluten-free, dairy-free pasta salad is packed with plant-based protein and is absolutely delicious! Perfect for meal prepping!

Ingredients
  

  • 2 (8 oz.) packages of lentil rotini pasta
  • 1 cup each (chopped black olives, diced English cucumbers, chopped baby spinach)
  • 1/8 cup diced red onion
  • 1 cup prepared homemade vegan ranch (see my Plant-Based Ranch Seasoning for recipe)

Instructions
 

  • Cook pasta according to package directions until slightly tender.
  • Drain pasta and rinse with cool water. Drain completely and add to large bowl.
  • Add chopped veggies on top.
  • Pour ranch over pasta mixture and stir thoroughly to combine.
  • Enjoy right away or store in airtight container in fridge for meals throughout the week!
