Drain tofu and cut into cubes. Bake at 350 degrees for 30 minutes or until slightly browned
Cook brown rice according to package directions. To save time, buy cooked brown rice in frozen section of the grocery store and sauté on stove for 5 - 10 minutes or until cooked through.
Chop onions, grape tomatoes, roasted red peppers, lettuce, cucumbers, and red onions into small, bite-size pieces.
Drain olives and place in separate bowl.
Assemble bowls with all ingredients (see picture) and top with Tzatziki sauce or Greek dressing (Ranch will also work!)
