  • 4 cups cooked brown rice
  • 2 bags frozen plantains
  • 1 avocado, sliced
  • 2 cans black beans
  • 1 cup vegetable broth
  • 2 tsp chopped garlic
  • salt & pepper to taste


  • Cook brown rice according to package directions.
  • Sauté frozen plantains in sauté pan with a dollop of vegan butter until browned.
  • In separate pan, cook black beans, vegetable broth, garlic, salt & pepper until heated through.
  • In a bowl add a cup of brown rice, plantains, scoop of black beans, and sliced avocado.
  • *Optional: Drizzle with plant based sauce like ranch, aioli, or mojo sauce
