Greek Bowls

These delicious bowls will make you feel like you're on vacation in Greece! So healthy, fresh, and delicious!

Ingredients
  

  • 1 block Extra Firm Tofu
  • 1 cup chopped English cucumbers
  • 1/4 cup chopped red onion
  • 1 jar Roasted Red Peppers, chopped
  • 1 container Organic Butter Lettuce, finely chopped
  • 4 cups Cooked brown rice
  • 1 cup Cherry tomatoes, sliced
  • 1 jar Medium black olives
  • 1 tbsp Plant based Tzatziki sauce (or Greek dressing)

Instructions
 

  • Drain tofu and cut into cubes. Bake at 350 degrees for 30 minutes or until slightly browned
  • Cook brown rice according to package directions. To save time, buy cooked brown rice in frozen section of the grocery store and sauté on stove for 5 – 10 minutes or until cooked through.
  • Chop onions, grape tomatoes, roasted red peppers, lettuce, cucumbers, and red onions into small, bite-size pieces.
  • Drain olives and place in separate bowl.
  • Assemble bowls with all ingredients (see picture) and top with Tzatziki sauce or Greek dressing (Ranch will also work!)
