Healthy Breakfast Ideas

I’m constantly trying to think of quick, healthy meals that I can make for breakfast.  I want something that is good for me, easy to make or that I can make ahead of time.  And it has to taste good too!  These two sandwiches fit the bill.  They also make a great lunch.

The title pretty much says it all! I toast a piece of gluten free bread and slather it with my favorite hummus (I love the roasted red pepper) and slices of avocado.  Sprinkle with a little sea salt and serve with a side of sliced apples, and you have a delicious sandwich full of healthy fats, protein, and slow releasing carbohydrates.  I ate this around 11:30 a.m. (yes, I had a very late breakfast that day!) and it kept me full until dinner at around 5:30 p.m.

  • 2 Slices Gluten Free Bread (Toasted)
  • 2 Tablespoons favorite Hummus
  • 1/2 Avocado (Sliced)
  • Pinch Sea Salt

This couldn’t be easier.  I just took a gluten free, brown rice tortilla and spread 2 tablespoons of almond butter over it.  Then I sprinkled about 1 tablespoon of a flax seed mix (it is so delicious!) over it.  I placed one banana in the center and rolled the tortilla around it.  The almond butter helps it stick.  Yum!  So easy, and my kids loved this one too! (Hint: if you warm these tortillas in the microwave for about 20 seconds, they’re much easier to roll).

  • 1 Gluten Free, Brown Rice Tortilla
  • 2 Tablespoons favorite Nut Butter
  • 1 Tablespoon ground flaxseed
  • 1 whole Banana (peeled)
