Protein-Packed Pasta Salad

This gluten-free, dairy-free pasta salad is packed with plant-based protein and is absolutely delicious! Perfect for meal prepping!

Ingredients
  

  • 2 (8 oz.) packages of lentil rotini pasta
  • 1 cup each (chopped black olives, diced English cucumbers, chopped baby spinach)
  • 1/8 cup diced red onion
  • 1 cup prepared homemade vegan ranch (see my Plant-Based Ranch Seasoning for recipe)

Method
 

  1. Cook pasta according to package directions until slightly tender.
  2. Drain pasta and rinse with cool water. Drain completely and add to large bowl.
  3. Add chopped veggies on top.
  4. Pour ranch over pasta mixture and stir thoroughly to combine.
  5. Enjoy right away or store in airtight container in fridge for meals throughout the week!
