Orange Pineapple Green Smoothie

There is nothing more refreshing on a hot summer day than an icy, cold smoothie.  And why not make it green while you’re at it? I threw this smoothie together the other day, because I had all the ingredients on hand, and it quickly became a new favorite.

This smoothie is full of Vitamin C thanks to the clementines and pineapples.  And the spinach adds a healthy dose of iron and energy-boosting chlorophyll.  One great tip I learned is that you can freeze bagged or boxed spinach.  I used to buy those large containers of organic spinach for smoothies, but inevitably, it would go bad before I could use it all.  Then, I learned I could just throw the whole container in the freezer, and the spinach could keep for months!  It also makes for an icier smoothie, which I love.

The coconut water is full of natural electrolytes as well as a hefty dose of potassium, making this ideal for staying hydrated.  It also lends a slightly sweet, slightly salty flavor, which is delicious.

Ingredients
  • 1-1/2 c. coconut water
  • 1 handful frozen spinach
  • 2 clementines or oranges, peeled and quartered
  • 1 c. frozen pineapple
Instructions
  1. Blend until smooth!
