Nothing says fall like pumpkins. You can find pumpkins in just about everything this time of year – pumpkin lattes, pumpkin pancakes, pumpkins smoothies, etc. So, I thought I would join the ranks and add some pumpkin flavor to our morning oatmeal. As the weather gets cooler, I like to make warm breakfasts, particularly for my boys. Oatmeal is a great complex carb that helps them feel fuller longer.
Sometimes, though, oatmeal can taste bland and boring. So to jazz it up a little, I simply cooked the oats in almond milk (to make them creamier), added a few tablespoons of maple syrup, and a few sprinkles of pumpkin pie spice. I knew it was a hit when my very picky youngest son asked for seconds!
