Method
- Cook brown rice according to package directions.
- Sauté frozen plantains in sauté pan with a dollop of vegan butter until browned.
- In separate pan, cook black beans, vegetable broth, garlic, salt & pepper until heated through.
- In a bowl add a cup of brown rice, plantains, scoop of black beans, and sliced avocado.
- *Optional: Drizzle with plant based sauce like ranch, aioli, or mojo sauce
