Lemon Blueberry Cooler

Lemons and Blueberries make a delightful pair in this refreshing, creamy smoothie.  This is one of those recipes that was created with what ingredients we had on hand at the time.  You know what they say – “Necessity is the mother of invention.”  That’s usually how it goes, isn’t it?  The best recipes are born from a little ingenuity using the ingredients you already have.

Blueberry smoothie

The Greek yogurt gives this smoothie its creaminess and a good dose of protein, calcium, and probiotics.  The lemon comes from lemon flavored coconut water.  Any flavored coconut water would work in this recipe, but our family enjoys the tartness the lemon flavor provides.  We’ve talked a lot about how nutritious just about every part of the coconut is, and that includes coconut water.  Coconut water is full of potassium and electrolytes, making it the perfect beverage to hydrate your body.  This is a great post-workout smoothie to replenish your fluids and get protein to your recovering muscles.  I added a scoop of vanilla whey protein powder, but I’m sure it would be just as good without it.

I threw in some chia seeds for extra fiber and omega 3 fats.  You’ll never know they’re there!  And the frozen blueberries add healthy antioxidants and a lovely purple hue to the smoothie.  This smoothie has been dubbed “The Best Smoothie Ever” by the three men in our household (one of whom is very picky).

This refreshing, creamy smoothie is perfect as a post workout drink. The coconut water contains natural electrolytes to hydrate the body, and the greek yogurt has protein for recovering muscles.
Ingredients
  • 1 c. plain Greek yogurt*
  • 1 c. frozen blueberries
  • 1½ c. lemon flavored coconut water
  • 1 heaping T. chia seeds
  • 1 scoop vanilla flavored whey protein powder (optional)*
Instructions
  1. Place ingredients in order listed in high powered blender.
  2. Blend for 30 seconds.
  3. Pour into glass and enjoy!
Notes
*For a dairy free and vegan option, you can use coconut milk yogurt and brown rice or pea protein powder.
