Plant-Based Soft Tacos

Ingredients
- 2 packets Cuban black beans (I like the Fillo's brand)
- 4 cups cooked white or brown rice
- 1 sweet onion, sautéed until tender
- 1 package slaw mix
- 3/4 cup Golden Thai Marinade (from California Olive Branch brand) or use your favorite dressing/marinade
- 1 package Cassava Tortillas (we like the Siete brand)
Instructions
- -Sauté onion in pan until tender. Add black beans and cooked rice and stir until thoroughly combined and heated through.-Meanwhile, in a separate bowl, mix together the slaw mix and marinade until well combined and set aside.-In a separate pan, heat tortillas on both sides. Once heated, add a scoop of rice and bean mixture, and fold tortilla in half, continuing to cook until slightly crisp on both sides. -Remove from heat and top with a spoonful of slaw mixture.
