Plant-Based Soft Tacos

These delicious soft tacos are full of fiber, plant-based protein, and antioxidants! These will definitely become a part of your weekly menu planning!

Ingredients
  

  • 2 packets Cuban black beans (I like the Fillo's brand)
  • 4 cups cooked white or brown rice
  • 1 sweet onion, sautéed until tender
  • 1 package slaw mix
  • 3/4 cup Golden Thai Marinade (from California Olive Branch brand) or use your favorite dressing/marinade
  • 1 package Cassava Tortillas (we like the Siete brand)

Instructions
 

  • -Sauté onion in pan until tender. Add black beans and cooked rice and stir until thoroughly combined and heated through.
    -Meanwhile, in a separate bowl, mix together the slaw mix and marinade until well combined and set aside.
    -In a separate pan, heat tortillas on both sides. Once heated, add a scoop of rice and bean mixture, and fold tortilla in half, continuing to cook until slightly crisp on both sides.
    -Remove from heat and top with a spoonful of slaw mixture.
