Lentil Bolognese Pasta
The Healthy Happy WomanThis plant based “Bolognese” sauce is delish, you won’t even miss the meat! The lentils give it a “meaty” texture while providing tons of fiber and plant based protein. This is an easy, healthy, delicious, and budget-friendly weeknight dinner 🙌

Ingredients
- 3 boxes Gluten Free Penne Pasta
- 2 cans black lentils, undrained
- 2 jars Prepared Pasta Sauce
- 2/3 cup Plant based milk (soy or oat are good options)
- 2 tbsp olive oil (or truffle oil)
- 1 tbsp dried oregano
- salt & pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat all remaining ingredients on stove until bubbly, then simmer on low for 15-20 minutes. Serve over pasta. Top with grated Parmesan cheese or Vegan Cheese alternative to keep completely vegan. SO good!
