The other day I was in Trader Joe’s and saw unsweetened, unsulphured, dried strawberries. I instantly wanted to concoct a dairy free pudding of some sort. Don’t ask me why dried strawberries made me think of pudding! But I’m so glad they did, because the resulting recipe was a big hit with my family.
This pudding is full of healthy fat and is gluten-free, sugar-free, dairy-free, and both vegan and paleo. And it’s super simple. Just throw all the ingredients into a high-powered blender or food processor.
The dried strawberries add a beautiful pink color and the bananas provide the sweetness in this recipe. Poured into decorative glasses, this pudding makes a beautiful presentation for guests (or for yourself and family 🙂 ). It’s the perfect recipe to make for a loved-one this Valentine’s Day.
- ¾ c. raw cashews
- 1 c. freeze dried strawberries (unsweetened and unsulphured)*
- 2 bananas
- 1 can full fat coconut milk
- 2 heaping T. coconut oil, melted
- 1 t. vanilla extract
- Place all ingredients except melted coconut oil in a high-powered blender or food processor and blend until smooth. Slowly add the coconut oil and blend for 10 seconds more. Pour into serving glasses and refrigerate at least 30 minutes before serving. Garnish with fresh or dried strawberries.
