Gluten-Free, Dairy-Free Strawberry Pudding

This delicious and creamy Strawberry Pudding is dairy-free, sugar-free, and gluten-free.
  • ¾ c. raw cashews
  • 1 c. freeze dried strawberries (unsweetened and unsulphured)*
  • 2 bananas
  • 1 can full fat coconut milk
  • 2 heaping T. coconut oil, melted
  • 1 t. vanilla extract
  1. Place all ingredients except melted coconut oil in a high-powered blender or food processor and blend until smooth. Slowly add the coconut oil and blend for 10 seconds more. Pour into serving glasses and refrigerate at least 30 minutes before serving. Garnish with fresh or dried strawberries.
*For a more vibrant pink color, you can always add more strawberries.
