Y’all are going to love these super simple, decadent treats that are gluten free and sugar free (and delicious)!
I tested this recipe a couple different ways, and each way I made it, they did not last long in our house (and my boys will always tell me if they did not like a recipe 😬)
Here’s how simple these truffles are to make (keep reading for suggestions on ingredient swaps to make dairy free and vegan variations of this recipe):
Gather Ingredients
You will need:
Unsalted, unsweetened peanut butter – This kind will not have any sugar in it. You can also use unsweetened almond butter or unsweetened sunflower seed butter (for a nut-free version!).
Organic Cream Cheese – I prefer brands that have probiotics in them! It boosts the nutrition factor and adds a good dose of healthy bacteria. I like Nancy’s brand. If you can’t find probiotic or organic cream cheese, regular cream cheese will do. For a vegan version, try Tuffuti, which is a soy-based “cream cheese”.
Liquid Stevia – Stevia is a plant-based, zero calorie sweetener, which is a much safer alternative to other artificial sweeteners on the market (such as Equal, Splenda, and Nutrisweet). I love the Sweet Leaf brand! If liquid stevia is hard to find, you can use the powdered version that comes in packets.
Sugar Free Chocolate Chips – To keep these truffles completely sugar free, I like using stevia sweetened chocolate chips, such as Lily’s brand. If you can’t find these, regular chocolate chips will do (they just won’t be completely sugar free).
Sea Salt – Did you know that most table salt has been stripped of all its nutrients? That’s why I love Celtic Sea Salt, as it has retained all its trace minerals and nutrients. Using this kind of salt will boost the nutrient value of these truffles!
Place all ingredients in large mixing bowl
Make sure the cream cheese is softened and place in bowl along with nut butter, stevia, and pinch of sea salt.
Mix Together until Smooth
Using a hand mixer, mix together all ingredients until well combined and dough like.
Place in Freezer for 30 minutes
This allows dough to solidify and roll into balls easily.
Roll dough into 1″ balls
Using a small spoon, scoop dough and roll into 1″ balls. Place on chilled parchment lined cookie sheet. Place back in freezer for another 30 minutes.
Melt Chocolate Chips
In a pan over medium-low heat, melt the chocolate chips until smooth. Remove from heat.
Dip truffles into melted chocolate
You can either cover each truffle completely or drizzle the melted chocolate on top, whichever look you prefer. They taste amazing either way! Place back into freezer for additional 30 minutes.
Store in airtight container in the Refrigerator
These will keep for up to a week (but they probably won’t last that long!).
