Protein-Packed Mac & Cheese

This delicious Mac & Cheese is loaded with plant-based protein! It's gluten-free, dairy-free, and delicious!

Ingredients
  

  • 2 12 oz. boxes gluten free elbow pasta (I love the Jovial brand)
  • 1 recipe Protein-Packed Dairy-free "Cheese" Sauce

Method
 

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a high powered blender, mix the ingredients for the "cheese" sauce until smooth and creamy (recipe on The Healthy Happy Woman)
  3. Pour cheese sauce over cooked pasta and stir until well combined. Serve immediately (great with a side of steamed broccoli for a delicious meal)!
