My friend, Pam, who is a seasoned runner, recently challenged me to run in a road race here in Charlotte. The race includes 5k, half-marathon, and marathon options. Pam is going to run the half-marathon, and my goal is to run the 5k. Much to my delight, my 12-year old wants to run it with me! I am super excited to have this fitness goal, and I love that it’s something my son wants to do with me. And thank you, Pam, for pushing me beyond my comfort zone – you’re a true friend 😉
After one of our recent training sessions, I made this hydrating smoothie as our post workout treat. I can’t get enough of this smoothie! It is so much better than those sugar-laden smoothies sold at coffee shops, and this smoothie contains vitamin c, enzymes, protein, and natural electrolytes from the coconut water. I’m sure this won’t be the last smoothie recipe I post, as I typically concoct different ones all summer long. But this one has definitely become a favorite. And the thought of making it when I finish with a jog gives me something to look forward to and helps me finish strong.

- 4 c. chilled coconut water
- 1 c. frozen strawberries
- 1 c. frozen pineapple
- ½ c. plain greek yogurt
- 5 to 10 drops of stevia, optional*
- Place all ingredients into a blender in order listed.
- Blend on high for about 30 seconds, until well blended.
- Enjoy!
