In my attempt to limit the amount of grains in my diet, I have been loving the Against the Grain Pita Bread for all sorts of creations. With the consistency of a soft wrap, this bread is free of both gluten and grains. We’ve been using them for sandwich wraps and have loved coming up with different ingredients to fill them with. But I especially love our latest creations with them – personal-sized pizzas!
Friday night is usually pizza night in our house, so we typically go back and forth between healthy frozen pizzas from the store, homemade pizzas or take-out pizza from one of our favorite pizzerias. These wraps are perfect, because the “crust” is already made – all we have to do is add some pizza sauce and our favorite toppings, and dinner is done!
In the pizzas pictured below, I used organic shredded mozzarella and chicken apple sausage (it’s what I had on hand), and they were delicious! We’ve also used organic rotisserie chicken, which is super quick because it’s already seasoned and cooked. We’re looking forward to copying some of our favorite restaurant pizzas and trying taco pizza, pimento cheese pizza (with crumbled nitrate-free bacon) and even pear and gorgonzola pizza! The possibilities are endless.
And if you want to make it dairy free, simply skip the cheese and add veggies, meats and different spices. Against the Grain pita bread can be found at most health food stores like Whole Foods, Earthfare or Sprouts and some larger grocery store chains.
