Party Tray Truffles

Serves: 15 Truffles
- 1 cup pitted medjool dates
- ½ cup flaked coconut
- ¼ cup sunflower seed butter (or favorite nut butter)
- ½ cup crisp rice cereal
- ½ - ¾ cup chocolate chips, melted
- flaked sea salt
- Combine dates, coconut, and nut butter into a food processor and pulse until a "dough" has formed.
- Transfer to a bowl and add the crisp rice cereal. Stir until well blended.
- Roll into medium size balls (about 15) and set aside.
- Melt chocolate on low heat, stirring constantly. Remove from heat and stir until smooth.
- Roll each ball into the chocolate, and coat well. Place on pan lined with parchment paper.
- Sprinkle with flaked sea salt and place in the refrigerator for at least 30 minutes before serving.
- Store in airtight container in the refrigerator.
