My friend, Pam, who is a seasoned runner, recently challenged me to run in a road race here in Charlotte.  The race includes  5k, half-marathon, and marathon options.  Pam is going to run the half-marathon, and my goal is to run the 5k.  Much to my delight, my 12-year old wants to run it with me!  I am super excited to have this fitness goal, and I love that it’s something my son wants to do with me.  And thank you, Pam, for pushing me beyond my comfort zone – you’re a true friend 😉

After one of our recent training sessions, I made this hydrating smoothie as our post workout treat.  I can’t get enough of this smoothie!  It is so much better than those sugar-laden smoothies sold at coffee shops, and this smoothie contains vitamin c, enzymes, protein, and natural electrolytes from the coconut water.  For more on the health benefits of coconut water, check out this article.

I’m sure this won’t be the last smoothie recipe I post, as I typically concoct different ones all summer long.  But this one has definitely become a favorite.  And the thought of making it when I finish with a jog gives me something to look forward to and helps me finish strong.

Strawberry Pineapple Smoothie

Strawberries, pineapples, and coconut water join together to create this refreshing and hydrating smoothie. Perfect for a post-workout drink or just a treat on a hot summer day!
Ingredients
  • 4 c. chilled coconut water
  • 1 c. frozen strawberries
  • 1 c. frozen pineapple
  • ½ c. plain greek yogurt
  • 5 to 10 drops of stevia, optional*
Instructions
  1. Place all ingredients into a blender in order listed.
  2. Blend on high for about 30 seconds, until well blended.
  3. Enjoy!
Notes
*This smoothie really doesn't need any sweetener, but if you want a really sweet smoothie, the stevia makes a great calorie-free sweetener.
